2 small tomatoes

1/3  green pepper, diced

1 green onion, minced

1/3  small onion, minced

Juice of 1/3 lime

1 tsp Olive oil

1/3 clove garlic, crushed

1-2 Tbsp chopped parsley

salt to taste

( 3/4 tsp minced hot pepper if you like)

 

Seed and chop tomatoes and green pepper.  Finely chop green onions and onion.  Combine tomatoes, onions and peppers.  Whisk together lime juice, olive oil, garlic, parsley and salt.  Pour over vegetables and toss.
