Mixed Greens Citrus Salad with Dried Cranberries & Glazed Walnuts

This will make one large portion or 2 small salads

2 cups Mixed Greens (or romaine, spinach, or other lettuces of your choice)

2 Cuties or Halos (Clementine or Mandarin)

½ cup walnuts or pecans or both

2 Tbsp brown sugar

1 Tbsp water

2 Tbsp dried cranberries

¼ cup Feta cheese, crumbled


1 tsp olive oil

1 tsp vegetable oil

1 Tbsp honey

1 Tbsp vinegar (I used balsamic)

Juice of one Clementine

salt and pepper to taste

poppyseed to taste if desired

Mix and stir well or shake in small jar with lid.  Will be extra and keeps well in refrigerator.

To glaze nuts:  place nuts in Pyrex measurer or other microwave safe glass bowl.  Add brown sugar and water and stir well.   Microwave for 2 minutes and stir when complete, and let cool for 4 minutes in same bowl.

Place greens in large salad bowl.  Peel and section Clementine and place on top of greens.  Add dried cranberries, nuts, cheese drizzle dressing over all.  Enjoy!  Can add chicken or salmon to this salad for a complete meal!  Just delicious!!
