Herbed Garlic Pork Loin

1 whole pork tenderloin (or loin)

6 cloves fresh garlic, finely chopped

½ cup fresh parsley finely chopped (or 3 Tbsp dried parsley)

2 tsp fresh thyme (or ¾ tsp dried thyme)

½ tsp salt

1 tsp pepper

½ tsp paprika

½ tsp onion powder

¼ cup olive oil

1. Remove silver skin from pork.

2. Combine all remaining ingredients together and spread over pork.

3. Cover and rest at room temperature for 1 hour; any longer please place in refrigerator.

4. Preheat grill to medium heat; or oven at 350 degrees.

5. Grill or bake pork to internal temp of 140 degrees, remove from heat source; rest 10 minutes and internal temp will rise to 145 degrees.

6. Slice and enjoy!
