Fast Fish in Foil with Vegetables

One Serving:                                                                                      Four Servings:

1 fillet fresh or frozen fish                                                             4 fillets fresh or frozen fish

1 Tbsp butter                                                                                     ¼ cup butter

1/8 tsp each:  Old Bay Seasoning                                               ½ tsp:  Old Bay Seasoning

                           Italian Seasoning                                                                  Italian Seasoning

                          Paprika                                                                                    Paprika

                          Garlic Powder                                                                       Garlic Powder

                          Onion Powder                                                                      Onion Powder

1/3 cup fresh or frozen vegetables                                           1 1/3 cups fresh or frozen vegetables

2 Tbsp Parmesan Cheese, grated                                              ½ cup Parmesan Cheese, grated

Squirt of Lemon or lemon juice                                                  ¾ tsp lemon juice

2 pieces foil, one on top of other for strength                      8 pieces foil, stack in 2’s for strength

 

Place fillet(s) on doubled up foil squares, one or two small per foil square.

Melt butter and herbs in microwave.

Place vegetables next to fish on foil.

Pour melted butter mixture over fish.

Salt and pepper fish and veggies if you like.

Sprinkle parmesan cheese on top of fish.

Add squirt of lemon juice on fish.

Tent/pinch foil together at top and fold sides well to keep juices inside.

Bake in 400-degree F oven for 15 minutes; open pouch and broil until cheese is lightly browned.

Plate fish and vegetables and pour sauce over top.

Fish is thoroughly cooked when a fork twists with ease in center, or a thermometer reads 145 degrees.
