Crust:

6 Tbsp butter, melted

1 tsp vanilla extract

1 ¼ cup white whole wheat flour or white flour

1 1/2 cup old fashioned oats

½ cup honey

¼ cup brown sugar

½ tsp cinnamon

pinch salt

Filling:

2 ½ cups fresh blueberries

2 Tbsp lemon juice

2 tsp cornstarch

¼ cup sugar

Instructions:

Preheat oven to 350 degrees

Line bottom of an 8x8 pan with parchment paper or foil and spray with cooking spray.

For crust, and crumble, place flour, oats, honey, brown sugar, cinnamon, salt in bowl.  Stir in melted butter and vanilla until just combined.  Will be dry and crumbly.  Save a cup for later.

Add all but the one cup of the mixture to the pan and press mixture over the bottom evenly.

Place blueberries and lemon juice, sugar and corn starch in a bowl and combine; pour over the crust.  Evenly sprinkle the remaining crumble over the top.  Bake the bars for 45 minutes.  Remove bars from the pan and let sit for 10 minutes.  Cut and enjoy!
