Blueberry Butter

This is a simple, yet homemade way to add a special touch to breakfast or brunch! Spread it on a croissant, toast, muffin, or use a dollop on pancakes or waffles.

1 ½ cups fresh or frozen blueberries

1/3 cup water

½ tsp honey

1 Tbsp corn starch

1 Tbsp water

½ tsp vanilla

½ cup or 1 stick softened butter

2 Tbsp water or milk

2 Tbsp powdered sugar

½ tsp vanilla

Pinch salt

Make a “compote” from the berries but placing first 3 ingredients in a microwave safe Pyrex or bowl.

Microwave until boiling.

Whisk cornstarch and water and stir into hot fruit mixture.

Microwave again until thickened

Add ½ tsp vanilla.

Cool compote in refrigerator

Using a stand or hand mixer, whip butter, water, powdered sugar, vanilla, and salt in mixing bowl. Whip until light and fluffy.

Add cooled blueberry compote, 1/3-1/2 cup to your taste, to the butter mixture and whip well again with mixer.

Serve and enjoy! Can be made with any kind of berry and great for using up older ones.

For a quick shortcut, can also use your favorite berry jam, but trust me, the homemade compote takes it to another level.
