Cheesy Corn Chowder

6 slices bacon, diced

½ large or one small onion, chopped (sweet onion great)

2 cups peeled potatoes (Yukon gold or B-sized yellow great)

2 carrots, peeled and sliced 2 cups chicken stock or broth

1 ½ cups whole kernel corn (frozen great)

1 can cream style corn

½ tsp pepper

7 Tbsp flour (Wondra flour great)

4 cups milk (whole milk great)

2 cups cheddar cheese, shredded

1 cup Velveeta cheese, cubed

This recipe is super great!

1. Add diced bacon and potatoes to a Dutch oven or stock pot over medium heat until bacon is browned and onions clear.

2. Add potatoes and carrots and broth, bring to boil, cover and simmer 20 minutes until potatoes are starting to get soft.

3. While that simmers, whisk flour into the milk and set aside.

4. Remove lid and stir in whole kernel and cream style corn and pepper.

5. Add flour/milk mixture and mix well.

6. Return lid and keep on medium heat just until simmers.

7. Add cheeses, stirring in until fully melted.
